Cheesy Cauliflower Rice (vegan, paleo, gluten-free, grain free)

What You Need:

1 tbsp ghee (or oil of choice)
1/2 Cup Cashew Cheesy Sauce - Original or Chipotle
1 medium head of cauliflower or 1 12oz bag of frozen cauliflower rice
Optional Toppings: Chives, Green Onions, Hot Sauce, more Cashew Cheesy Sauce

Directions:

Pulse cauliflower in a food processor until a rice consistency. Add ghee to a skillet and when warm, add cauliflower. Cook cauliflower until softened and add Cashew Cheesy Sauce. Mix until incorporated and serve.
